When I make salad, I tend to throw everything available in the fridge into a bowl. Tonight, I baked some chicken breast and added it to a slew of veggies: yellow pepper, onion, sugar snap peas, carrots. I also added some crushed up walnuts and feta cheese. Now the chicken turned out pretty awesome. To make the marinade, I made a mixture of olive oil and balsamic vinaigrette, Herbes de Provence and a bit of pesto. You have to adjust it to how you like it. I didn't add as much of the vinaigrette as I could have because I find it can get stronger when baked. Anyways, it was a nice end to the day.
